Show us your Life: Recipes ~ My Appetizer, sides and a Twist on a Southern Favorite



This week at Kelly's Korner - it is all about Dinner Recipes. I am going to share a appetizer and a different twist on some Southern favorites: Barb-Q chicken and Mashed Potatoes and gravy.

My Appetizer is homemade hummus and homemade pita chips. Super easy, & super yummy. It's great to keep for a few days and munch on and also great when having company or a party.

There are many hummus recipes out there, so it depends on what flavor you want. One of my favorites is Roasted Red Pepper and Garlic - which is what I made. If you are not familiar, hummus is made of Chick peas. I have bought hummus at the store many times - but I enjoy making my own too. To eat with the hummus, I like pita bread or pita chips - which you can buy at the store as well. Personally I love pita chips with hummus, and it is super easy to make your own.

Roasted Red Pepper Hummus

Prep Time: 10 minutes

Ingredients:
  • 1 can of chick peas/garbanzo beans (15 oz)
  • 1/3 cup tahini (this is a peanut butter like substance but with sesame seeds and can usually be found at your local grocery store - or you can make your own)
  • 1/4 cup lemon juice
  • 2 tablespoon olive oil
  • 2 garlic cloves, crushed
  • 1/2 cup -3/4 cup roasted red peppers (depending on taste)
Preparation:

Combine everything in a food processor and process til smooth. Add peppers and garlic til desired consistency.

Garnish with parsley. This hummus can be made up to 2 days in advance and stored in the fridge. You can serve it warm, cold or room temp.
Pita Chips
Purchase a bag of pita pockets. Cut them in to triangles. Lay them on a cookie sheet and brush them with olive oil. Then sprinkle a little salt and pepper on them. I also sprinkled a little garlic powder, or you can use garlic salt - but if you do this, I wouldn't use regular salt before so that way they are not too salty. Sometimes a little Parmesan cheese sprinkled on them is good too as well as some herbs. I didn't do the Parmesan when I made this batch - but you can.



Bake approximately 10 minuets at 425. You can get them out a little before if you want them to stay a little chewy or leave them in a bit longer if you want them super crispy. But 10 min. is probably the best. They will harden once they sit for a bit. I usually store mine in a large ziplock bag.





Bar-B-Q chicken legs with Mashed Potatoes 'n Gravy, & Green Beans

We eat a lot of chicken, but sometimes I get SO tired of just regular baked chicken, so we have tried to do more chicken on the grill. One of my favorite things to grill are chicken legs. They are not very expensive and so easy. I like to put a lot of barb-b-q sauce on mine and then throw them on the grill. I did this not too long ago and with it I served another Southern classic: Mashed potatoes and gravy, but with a twist. I actually took some baked potatoes we had left over and made some homemade mashed potatoes, which is super easy. But for something even quicker, you can do the good 'ol store bought mashed potatoes in the box. I had some gravy in the fridge that I had purchased at the store, and instead of placing it on top of the mashed potatoes, I drizzled it on the plate first, then took an ice cream scoop and scooped out the mashed potatoes. After that I took some frozen green beans I had sauteed and placed them on the plate, then added the chicken leg. Everyone love this. It was sooo good, so easy and looked pretty too! This is a great thing to do for company too! Chicken legs cook pretty fast on the grill and as I mentioned before, they are not very expensive. So if you are having a party - you could buy a lot of these without breaking the bank!



Two other VERY simple things to do to go with your dinner are roasted veggies and then for a bread, drop biscuits. Roasted veggies can be almost any veggie. I've done potatoes, onion carrots, bell pepper and then squash, zucchini and onion is really good too! So you can really do anything. Sometimes I just do what I have, like this time when I only had squash and carrots in the fridge - some onion and bell pepper would've been good with it too, but this was still yummy and healthy too.



The drop biscuits are great for breakfast and to go with dinner depending on what you are having. And they are as simple as they sound, you simply mix and drop them on a cookie sheet. I wont take the time to type the recipe, but it is usually on the side of a Bisquick box. I've done this and added sugar to them to make strawberry shortcake and then I've added garlic and shredded cheese when mixing them for garlic cheese biscuits. So there's a lot you can do with a box of Bisquick!

So I'm thinking of doing a little DIY project, having some wine, and lighting my candles all over the house as usual and maybe a movie later. If I get into my DIY project tonight and it turns out - I'll post pics.

Show us Your Life: My Fabulous B&W Wedding Shower

Towards the end of the shower while everyone was chatting, we got a group pick. A few people had already left, but I was glad to get a pick with family & friends.


I LOVED my Wedding Shower. My best friend Ashley and friend Jennie did a great job planning this. Jennie and her Mom offered their home for my shower and helped with food and flowers, and my BFF Ashley worked so hard on all of the little details! I loved all of the white flower arrangements and how Ash had our engagement pictures placed everywhere. I think that made it very personal. My wedding colors were black and white, so of course the theme of my shower was B&W. I wanted to show my adorable shower invitation, but it is still in a box somewhere from the move - when I do find it I will be sure to post! Everyone was supposed to wear black and white - which I just loved! Almost everyone followed the rules and wore b&w - I think like 2 or 3 people didn't, ha ha - shame on them! I had wanted to find a really cute white dress to wear with black boots. I thought that would be so cute since I was the bride-but as usual, when you are looking for something in particular - you can never find it. I think I bought like 3 or 4 dresses and then the day of the shower, just picked one. We had great food, drinks, and desserts! I got a TON of gifts, which I could not believe and was so thankful for! I felt like crying afterwards because I knew I had a lot of girlfriends and family and people in my life who loved me, and having all of these ladies together and knowing they were there for me was quite touching! It was a FABULOUS party! There was music playing in the background, which I always love. It was an afternoon shower - which I really liked too. The shower was at 4:00 in the afternoon. Ashley knows how much I love candles and to me, having candles everywhere during broad day light just isn't the same as when it's later in the day or the evening. It was kind of an overcast, cozy wintery day. My friends did a great job and I cannot thank them enough for throwing me an amazing shower!!!

Oh and Mike stopped by at the end of the shower (along with my dad and Grandpa) to say hello and then we put them to work loading up all of our gifts. Mike and I got some pics with my girls.

Show us your Life: Baby Showers (& thinking of desks/bookshelves)

This week at Kelly's Korner it is all about Baby Showers. I posted about the baby shower I helped plan for my BFF Ashley a while back. You can view the post I did about her adorable Lil Diva Baby Shower here. It was so fun to do and I can't wait to do another, and one day - enjoy my own.

I'm still re-arranging a couple rooms in the house and thinking about some pieces I may want to move into other rooms. I have a desk/hutch in our bonus room that is not being used and I am contemplating putting that in our den area. I would probably end up painting it - or may keep my eye open for just a desk alone. I already have a really cool bookshelf in there, which may stay or go in another space. I have thought about doing a bookshelf in our bedroom or living room. I just love bookshelves - I think they are great for organization and just a great touch for almost any room. I especially love the ones that are painted a different color on the inside - such a great look! I'm always looking at rooms and spaces to get ideas and inspiration from. These are some rooms that I have found recently that have desks and bookshelves in them and look just fabulous!

Hope everyone had a great weekend! I am off to eat a yummy burger Mike grilled tonight and then watch a little Design Star!! Wonder who's "Show will be canceled" tonight??

Show us your Life Continued: Honeymoon

Now for our Honeymoon. . . .We did not leave for our Honeymoon until about 5 days after our wedding. We went on a cruise and due to dates of the cruise, we had to wait a few days after our wedding. I wasn't too happy about this at first when we were planning everything, but after the wedding, I was glad that it worked out like that because we were both SO exhausted! It was also nice because with everything going on with the wedding, I didn't have to worry about packing for the honeymoon. So I got to do that after the wedding, which was nice! I would recommend this for everyone!

We did stay at the Westin Hotel the night of our wedding. Mike had booked us a nice room, but at the end of the night when we arrived to the hotel, we went to our room and we were headed up to the top floor where the suites are. A man escorted us to our room and carried our bags, opened the door for us, and Mike carried me over the threshold. The sight was the most beautiful thing I had ever seen. When Mike checked in and told the hotel that we were getting married that night, they gave him a suite. It was a $1500 a night room and it was AMAZING!!!! Mike had the entire suite, living room, bedroom, bathroom, all covered in rose petals and candles - I mean EVERYWHERE. We got in the room and Mike had classical music playing, a bath with rose petals, champagne, & a basket of food from our reception. Mike went over and pushed a button and the curtains opened up and the view was over looking downtown Memphis- it was BREATHTAKING! It was like out of a movie!!! Since we got married on the 29th of Dec. there were still Christmas decorations throughout the city. Our view also included a HUGE Christmas tree covered in lights. It was seriously the most amazing thing ever!! I have never stayed in a room like this. Oh and the bed had the softest, most comfortable linens ever! I didn't want to leave. We enjoyed our night there! For our actual HM we went on a cruise to Jamaica, Cozumel, Grand Caymans, and the Bahamasl! (Sadly we didn't get to enjoy the Bahamas because we both for SO sick our last 2 days . . . .ugghh) We stayed in our room for a full 24 hours . . . But other then that,it was so fun! I really enjoyed it, although the only part I didn't care for was how almost everywhere we stopped had the same shops and things as the destination before . . . I enjoyed Cozumel the most because it was more authentic. Mike bought me some jewelry and a really cool turquoise ring at this cute little shop there. The man who owned it was so nice and he liked us so much he gave us a shot of some very nice Tequila. I am not a fan of Tequila, but it was the smoothest I have ever had and was not bad at all.

We had a great time relaxing and spending time together as newlyweds!
