Easter.

This Easter weekend was spent with my hubby and younger brother. My parents are in TX 13+ hours away and they were not able to come for the weekend. I was sad about that because it's just not the same on Easter without them, but I was so happy my brother came home from Nashville and spent the weekend with us. He helped me out around the house too since I'm still not getting around to good. I also hated not having Easter goodies or a little basket for them both, but since I'm not getting out too much right now with my ankle, I just wasn't able to do it this year. I should've planned ahead and gotten a few things before, but I didn't. Oh well.

However, I was determined to fix an Easter meal and my lil bro & hubby helped me out so I could fix a few things. The only thing I didn't fix was our main course, which was some good 'ol fried chicken. Mike picked that up and I made all the sides and dessert. I had to sit at the kitchen bar most of the time and they handed me things I needed since I couldn't be up on my ankle much. I stood up for our pictures and got around some, but it was too hard to stand in the kitchen all day so they helped me. It was kinda nice I must say - having someone hand you ingredients and utensils! I enjoyed that part!

Oh and below was what I looked like as I cooked Sunday. It was a sight to see for sure!


Earlier in the week I had made some cute Easter cookies (again...sitting at the kitchen bar!) I did regular sugar cookies, iced them, then colored some coconut and put some chocolate filled eggs on top. They were really good and easy! Coconut on cookies is tasty too!! I was thinking this would be cute to do at Christmas with red and green icing then put the white coconut on top! I hope I remember that, haha!

So that was our Easter - tonight we have been watching stupid weather reports all night! I'm SO sick of all this bad, scary, un-nerving weather! It's going to be a long night I think. Hope all of you had a good Easter weekend with family and friends. And if you are having bad weather these next few days like we are here in Memphis, be safe!!
