Bon Appétit

I feel like I haven't really really cooked since Christmas. I mean I've fixed dinner of course, but it's all kind of been quick stuff that I do not consider really cooking. But tonight - I fixed something super yummy! I fixed Cornish Hens and rice. The hens were quite tasty and the marinade I used was heavenly. I have always loved Cornish Hens, my Mom used to fix them when I was little. Sometimes if we were going to be going out of town for Thanksgiving and not having it our house, my mom would fix Cornish Hens and I loved it. When I was little I thought I had my very own little turkey, ha ha. I have never fixed them before and they turned out pretty good. The only thing I'm not wild about and something Mike said was that you have to work to get the meat, which is true. So this may not be something I fix all the time, but we certainly enjoyed it and I had fun cooking them.
For Christmas, someone gave my Mom some homemade Caramel Sauce & since was in the process of moving at the time, she gave it to me. So tonight I used it and put it with some baked apples and pecans for dessert.
So that was din din tonight! I'm stuffed!!!

*Note: For those of you who are not familiar with Cornish Hens, they are small, individual size. The photos almost look like it's a turkey and on a serving disk, but this was an individual plate. It's kind of like a mini turkey. So Mike and I had our own - and as I said before - we were stuffed!

Oh and here is the recipe for the marinade I used tonight . . . .

Mojo Marinade

This marinade can also be used for steaks, pork and fish minus the sugar.

  • 6 cloves garlic, coarsely chopped
  • 1/2 cup minced yellow onion
  • 1 cup freshly squeezed orange juice
  • 1/2 cup freshly squeezed lime juice
  • 2 tbs of sugar
  • 1/2 tsp ground cumin
  • 1 tsp dried oregano flakes
  • 1/2 tsp lemon-pepper seasoning
  • 1/2 tsp freshly ground black pepper
  • 1 tsp kosher salt
  • 1/4 cup chopped cilantro
  • 1 cup olive oil
