1 potato, 2 potato, 3 potato, 4 . . . .



Tonight I was trying to decide what to fix for dinner. My hubby was a little under the weather today and I offered to go to the store to get him some soup, then it made me start thinking about what kind of soup sounded good to us. Then it hit me, potato soup! I had a big bag of potato's I needed to use, so Potato Soup it was . . . and I was going to make it!!




This was my first time making potato soup. My Mom has always made the best! I didn't think ahead of time to get her recipe, so I looked one up on one of my favorite food websites called TasteSpotting, then I found a recipe. You can click here to view it. I do want to get my Mom's recipe though, cause hers is really good too! I have a lot left over, which means I will be having it for lunch tomorrow! Stuff like this is SO good leftover too because all the flavors absorb. Are you all hungry now???

Texas Trip {lots of pics}

As usual, I am playing catch up on my blog . . . so let me rewind to a few weeks ago when I went to visit my parents in Texas (Lubbock to be specific.) I stayed for almost a week and it was great. We went out to dinner, laid out, Mom and I shopped, had plenty of wine (he he) and just enjoyed our time together!


First night, Mom & Dad took me to dinner at one of the best restaurants in town, the Double Nickel! Wish I had taken photos of the inside because it was all black and red with gorgeous chandeliers and lighting! Can't wait to go back!



After dinner we went for some after dinner entertainment . . . .

Every time I come to visit, Mom always has fresh flowers in my room! Love it!!


Next day . . shopping with Mom! We spent almost 3 hours in this one store. They had a TON of accessories, shoes and handbags AND a frozen margarita machine!! ha ha - what can get better then jewelry, handbags, shoes and margaritas!! It was SOO fun and we left with lots of goodies (that will be another post in itself!)


After a full day of shopping we met a friend of hers at this great little place Stella's for happy hour . . . . as if the margaritas were not enough, ha ha


Us afterwards - we were "happy" alright! LOL


Next day was pool time! Mom making us a drink to take out by the pool!



That night we went to The Ander's house, friends of my parents. They had the neatest back yard and patio!


I made friends with these guys!


While we waited on dinner we enjoyed these amazing bacon wrapped stuffed jalapenos!!

The next day was gorgeous! Mom, Dad and I went out for lunch and well . . . more shopping!


We do not have a World Market where I live anymore, so I HAD to go while I was there since they had one! Look at their wine selections! They also carry my favorite candles so I had to stock up on those! Oh how I miss this store!!!!!

Mom and I found this adorable dress shop. This is me after trying on the cute dress behind me . . . . . . SOLD!

Next day, it was time to come home! I was sad to go but had a blast. By the looks of my plane ride home, you would think I was a guy . . . beer and pretzels! ha ha

Caroline Manzo Says It All Too Well!

I'm sure by now many of you have seen RHW of New Jersey reunion. Boy was it entertaining! One thing I love about the NJ housewives is Caroline Manzo. She says it like it is, doesn't dance around the truth and is not fake!! I love that and that is how I hope I am. The past few years I made up my mind that I am not going to be all fake and be someone I'm not. As I was watching the reunion, I began to think that I am kinda like Caroline Manzo! I stick up for my family, you mess with my family, you mess with me!! There are so many things about her I like. I have to give it to her though, she stayed pretty composed, that's the one area I think we may be different. She holds it together when I think I would have been coming up off the couch, ha ha!

There is one things she said in particular that I really liked and feel like it is me 100%! She said:

"If I'm a bitch, I will own it . . . I am not a coward, I am not a phony! I'm not going to say everything is lolly pops and roses, because it's not!"

That says it all! I strive to not be a phony or a fake and if that means people thing I'm a B****, then so be it! There are so many fake people in this world and I do not ever want to be labeled as fake! Now don't get me wrong, you should always treat people kind and love one another, I am all about that of course - but living my life as someone I'm not and being one way one day then another way tomorrow is not me. I am who I am, love me or hate me!

Ha ha - all right, I'm done. I've had this on my mind for over a week since I watched the reunion and I'm just now getting to posting it! I had a great weekend. My parents left today which makes me kinda sad, but I know I will see them soon. I was so glad they were here for a week and that I got to spend time with them! There is nothing like family time!

Well, guess I'm gonna go now, the VMA's are on and I don't want to miss much! Hope all of you had a great weekend as well!! Hugs!

New Necklace


When I was in TX a couple weeks ago visiting my parents, my Mom and I did a lot of shopping. It is bad when we get together, we just love to shop! When the 2 of us shop together, it gets dangerous . . ha ha!

One of my favorite things I purchased was this lovely gold necklace. They had a variety of letters but I went with the" L" for Lindsey. I almost did an "N" but may have Mr. Nabors get me that one later! ;) It is on a pretty, delicate gold chain with a white and gray pearl. I have been wearing it a lot and I just LOVE it!!! I also love the fact that it is brushed gold, my fav when it comes to gold!


So just had to share my fabulous new necklace!

These are just a few of my favorites from the Emmy's. I'm a little late posting them, but oh well. I think Mariska looks gorgeous. I love her figure and the fact that she is curvy, like a real woman! Julie Bowel looks great, as well as Eva Longoria, does she ever look bad?? I don't know if I've ever seen Claire Danes look this stunning. Something about her looks different to me, but she looks great! And then Lea Michele looks fabulous! I love the lines of the gown and her amazing necklace!!!

Back to Life

Well, I am back from TX! I had a great time visiting my parents and spending time with them! It's always nice to get away for a while, although I certainly missed my hubby and wished he had been able to come with me. But distance makes the heart grow fonder and it was so wonderful to see his handsome face when he picked me up at the airport!!

Before I left things were pretty hectic and I hadn't cooked much, then I went out of town for several days . . . so tonight I thought it was time to cook my hubby and yummy meal. I also had to to take Mr. Big to get groomed today, so I dropped him off at the groomers, which is right next to the grocery store. I went to the grocery and got all I needed to make a nice meal, then before I knew it, it was time to pick up my baby! M kept telling me to get him shaved. His hair grows SO fast and I prefer him to be fluffy and full of hair, but when he gets groomed, we usually get it pretty short. He looked so different! I feel like I have a new dog, ha ha! I still like his hair fluffier, but no matter what, he is still such a cutie pa tootie!!


Okay, back to dinner . . . . I fixed a Chili Lime Salmon, Parmesan Asparagus (with a little bacon sprinkled on top), Baked potato, and poppy seed rolls. It was soooooo good if I do say so myself!!


And for dessert . . . chocolate mousse!! mmmmm


I will be working most of the weekend, but hopefully in the next couple days I will find some time to post some pics from my trip! =)
